Ingredients
For the Muffins:
- 1 ½ cups almond flour
- ½ cup vanilla protein powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- ¼ cup almond milk (or any milk of choice)
- ¼ cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
For the White Chocolate Drizzle (Optional):
- ¼ cup white chocolate chips
- 1 teaspoon coconut oil
Instructions
Step 1: Prep & Preheat
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with cupcake liners.
Step 2: Make the Batter
- In a bowl, whisk together almond flour, protein powder, baking soda, salt, and cinnamon.
- In another bowl, whisk the eggs, almond milk, maple syrup, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients.
- Add the chopped strawberries and mix until just combined.
Step 3: Bake
- Spoon the batter into the muffin tin, filling each about ¾ full.
- Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
Step 4: Add White Chocolate Drizzle
- Melt the white chocolate chips with coconut oil in the microwave, stirring every 20 seconds.
- Drizzle over the muffins and let it set before serving.
